A number of chronic diseases, including obesity and type 2 diabetes, are associated with genetic susceptibility and/or environmental stimuli. Once triggered, these chronic diseases share an inflammatory component making them effectively persistent "wounds". NFκB signaling is the most common inflammation pathway related to the progression of the diseases.
Carotenoids are tetraterpenoidorganicpigmentswhich are naturally rich in some fruits and vegetables. People, consuming diets rich in carotenoids, are healthier and have a lower risk of chronic inflammation. We and others have reported that berry fruits, e.g. strawberry, cranberry, and wolfberry, are enriched of carotenoids including lutein and zeaxanthin. We have also demonstrated that zeaxanthin and lutein attenuated cellular inflammatory damage through AMPK inhibition of NFκB signaling.
Here I will be presenting our most recent findings in potential roles of carotenoids in inflammation-linked hepatic steatosis and retinal degeneration in early stage of diabetes.
